Our fresh oyster meat is carefully shucked using High Pressure Processing (HPP), a method that gently opens the oyster without damaging the integrity of the meat. This advanced process preserves texture, flavor, and natural juices while ensuring safety and consistency.Once opened, the oyster meat is removed from the shell, inspected, and packaged for immediate use in kitchens and seafood operations.All shucked items are also available with HPP processing upon request.
